Creamy Ham and Vegetables

Ingredients
- 115g / 4 oz butter
- 225g / 8 oz cooked ham steak
- 250g / 1 cup red lentils or 200g / 1 cup cooked white rice
- 475ml / 1 pint coconut milk
Instructions
1. Melt 115g (4 oz) of butter in a large pan over medium heat, approximately 175°C (350°F).
2. Add the cooked ham steak and cook until lightly browned, roughly 5 minutes per side.
3. Next, add the red lentils or cooked white rice, stirring well to combine.
4. Pour in the coconut milk and bring the mixture to a gentle simmer.
5. Reduce the heat to low, around 150°C (300°F), and let it cook for an additional 10 minutes, stirring occasionally.
6. Serve hot and enjoy!
