Creamy Mango and Lime Cake
This luscious cake is the perfect blend of sweet and tangy, with the tropical flavors of mango and lime taking center stage. Moist and indulgent, it's a treat that's sure to impress, whether you're serving it at a special occasion or just satisfying your sweet tooth.
Ingredients
  • 375g (13.2 oz or 2 3/4 cups) all-purpose flour
  • 250g (8.8 oz or 1 1/4 cups) granulated sugar
  • 150g (5.3 oz or 1/2 cup plus 2 tbsp) unsalted butter, softened
  • 150g (5.3 oz or 1 cup) frozen mango, thawed and chopped
  • 100g (3.5 oz or 1/2 cup) white chocolate, chopped
  • 3 large eggs
  • Grated zest of 1-2 limes
  • 30ml (2 tbsp or 1 fl oz) freshly squeezed lime juice
  • 6g (1 tsp) salt
Instructions

1. Preheat the oven to 175°C (350°F).

2. In a large mixing bowl, combine softened butter, sugar, and eggs. Beat the mixture until it's smooth and creamy.

3. Add flour, salt, and chopped white chocolate to the mixture. Blend until well combined.

4. Pour the mixture into a greased and floured 22-24 cm (9-inch) springform pan. Arrange chopped mango on top of the mixture.

5. Bake the cake in the center of the oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.

6. Garnish with whipped cream, fresh mint leaves, and a sprinkle of lime zest if desired.
