Creamy Mango and Lime Cake

Ingredients
- 375g (13.2 oz or 2 3/4 cups) all-purpose flour
- 250g (8.8 oz or 1 1/4 cups) granulated sugar
- 150g (5.3 oz or 1/2 cup plus 2 tbsp) unsalted butter, softened
- 150g (5.3 oz or 1 cup) frozen mango, thawed and chopped
- 100g (3.5 oz or 1/2 cup) white chocolate, chopped
- 3 large eggs
- Grated zest of 1-2 limes
- 30ml (2 tbsp or 1 fl oz) freshly squeezed lime juice
- 6g (1 tsp) salt
Instructions
1. Preheat the oven to 175°C (350°F).
2. In a large mixing bowl, combine softened butter, sugar, and eggs. Beat the mixture until it's smooth and creamy.
3. Add flour, salt, and chopped white chocolate to the mixture. Blend until well combined.
4. Pour the mixture into a greased and floured 22-24 cm (9-inch) springform pan. Arrange chopped mango on top of the mixture.
5. Bake the cake in the center of the oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
6. Garnish with whipped cream, fresh mint leaves, and a sprinkle of lime zest if desired.
