Creamy Mango and Passion Fruit Delight
Ingredients
- 125 g heavy cream (1/2 cup)
- 125 g vanilla yogurt (1/2 cup)
- 1 large egg yolk
- 5 g vanilla sugar (1 teaspoon) or 1/2 teaspoon vanilla extract
- 1 large ripe mango peeled seeded and puréed (about 1 cup)
- 2 passion fruits seeds and pulp scooped out (about 1/4 cup)
Instructions
1. Whip heavy cream in a clean bowl until stiff peaks form then set aside
2. Whisk vanilla yogurt egg yolk and vanilla sugar or vanilla extract in a bowl until smooth
3. Purée peeled and seeded mango until smooth
4. Scoop seeds and pulp from halved passion fruits
5. Gently fold whipped cream into yogurt mixture until just combined
6. Fold in mango purée and passion fruit pulp
7. Chill in refrigerator for at least 30 minutes
8. Serve cold
