Creamy Mango Chutney Chicken Breast Fillets
Ingredients
- 3 oz fresh spinach
- 2 tbsp oil
- 2 lbs chicken breast fillets
- 1 large yellow onion
- 0.5 tsp ground black pepper
- 0.25 tsp salt
Instructions
1. Preheat your oven to 375°F (190°C) or 220°C.
2. Heat oil in a pan over medium heat then sauté onions until they are translucent.
3. Add chicken breast fillets to the pan cook until browned on both sides and cooked through.
4. In a separate pan combine mango chutney and spinach cook over low heat stirring occasionally until the spinach has wilted.
5. Serve the chicken breast fillets with mango chutney sauce spooned over the top accompany with a side of steaming hot rice and fresh spinach leaves.
