Creamy Oven Baked Salmon with Herb Topping

Ingredients
- 4 salmon fillets (21.2 ounces / 600 g)
- 1 large leek white and light green parts only thinly sliced
- 2 garlic cloves minced
- Zest and juice of 1 lemon
- 5.3 ounces (150 g) cherry tomatoes halved
- 1.5 cups (85 g) fresh basil leaves loosely packed
- 2 cups (120 g) fresh parsley leaves loosely packed
- 3 cups (720 ml) heavy cream
- 1 cup (240 ml) whole milk
- Salt and freshly ground black pepper to taste
Instructions
1. Preheat oven to 392°F (200°C)
2. Spread sliced leek evenly in a baking dish
3. Place salmon fillets over leek
4. Season salmon with salt and pepper
5. Whisk heavy cream basil parsley minced garlic lemon juice salt and pepper in a bowl
6. Stir whole milk into cream mixture
7. Pour cream mixture over salmon
8. Scatter cherry tomatoes on top
9. Bake until salmon flakes easily with a fork about 15 minutes
10. Sprinkle with lemon zest and serve with boiled potatoes or rice
