Creamy Pasta Salad with Bacon
Ingredients
- 400 g (14 oz) fusilli pasta
- 200 g (7 oz) bacon
- 200 g (7 oz) smoked ham or pastrami
- 200 ml (6.8 fl oz) crème fraîche
- 45 ml (3 tbsp) sweet chili sauce
- 5 ml (1 tsp) sambal oelek
- 1 red bell pepper finely chopped
- 30 ml (2 tbsp) roasted sunflower seeds
- 30 ml (2 tbsp) chopped fresh parsley
- 15 ml (1 tbsp) chopped fresh chives
- Salt and pepper to taste
Instructions
1. Boil a large pot of salted water Cook pasta until al dente per package directions then drain and cool completely
2. Fry bacon in a skillet over medium heat until crisp Transfer to paper towels cool slightly then chop finely
3. Brown smoked ham or pastrami in same skillet over medium heat Chop coarsely and set aside with bacon
4. In large bowl combine cooled pasta crème fraîche sweet chili sauce sambal oelek sunflower seeds chives and parsley
5. Fold in bacon and smoked meat mixture until evenly coated
6. Season with salt and pepper
7. Mix in chopped red bell pepper
8. Cover and refrigerate at least 30 minutes for flavors to meld
9. Serve chilled
