Creamy Pork Stir with Apple and Cucumber
Ingredients
- 1 cup (240 ml) chopped fresh dill
- 1/2 cup (120 ml) mayonnaise
- 1/2 cup (120 ml) sour cream
- 1/4 cup (60 ml) chopped fresh chives
- 1/2 cup (120 ml) diced apple
- 1/2 cup (120 ml) diced cucumber
- 1/2 tsp (2.5 ml) salt
- 1/4 tsp (1.25 ml) black pepper
- 8 oz (227 g) smoked pork, sliced
- 2 tbsp (30 ml) lemon juice
Instructions
1. Slice the smoked pork into thin strips and place it in a bowl.
2. In a separate bowl, combine 1/2 cup (120 ml) sour cream, 1/4 cup (60 ml) mayonnaise, 1 tbsp chopped dill, 1 tsp chopped chives, salt, and pepper. Mix until smooth.
3. Add 1/2 peeled and diced apple and 2 tbsp diced cucumber to the cream mixture. Stir until well combined.
4. Add 1 tbsp lemon juice to the pork and toss to coat.
5. Serve the pork with the apple and cucumber cream mixture spooned over the top.
