This casserole is pure comfort food - rich and satisfying. The sweetness of caramelized onions pairs perfectly with the savory flavor of falukorv sausage, and a hint of fresh horseradish adds a nice kick. Ingredients
  • 1 cup (250ml) veal fond or beef broth
  • 2-3 pinches of salt and pepper
  • 1.21 pounds (550g) Falu Sausage (Swedish sausage made from a mixture of pork and beef)
  • ½ cup (15g) fresh dill
  • 1 tablespoon (15g) unsalted butter
  • 1 large onion, peeled and chopped
  • 3 medium tomatoes, sliced
  • 3 tablespoons (45g) freshly grated horseradish
  • 3 cups (720ml) heavy whipping cream
Instructions

1. Slice the sausage into thick rounds, about 1.3 cm (1/2 inch) thick.

2. Peel the onion, cut it in half, and slice it into thin strips.

3. In a large skillet, melt 2 tablespoons (30g) of butter over medium heat. Add the sliced sausage and onion to the skillet and cook, stirring occasionally, until they're caramelized and golden brown.

4. Add 250g (8.8 oz) of sliced tomatoes, 125ml (4.2 fl oz) of veal fond, and 125ml (4.2 fl oz) of heavy whipping cream to the skillet. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.

5. Stir in 2 tablespoons (30g) of freshly grated horseradish and season with salt and pepper to taste.

6. Serve the dish hot, garnished with chopped fresh dill and accompanied by boiled potatoes.
