Creamy Tuna and Olive Pasta

Ingredients
- 500ml/2.1 cups olive oil becomes 120ml/1/2 cup olive oil
- 120ml/1/2 cup olive oil
- 800g/3 cups crushed tomatoes (canned)
- 115g/1/2 cup chopped black olives
- 115g/1/2 cup chopped fresh parsley
- 280g/9.9 oz pasta of your choice
- 200g/7 oz can of tuna in water or oil
- 3g/1 clove garlic, minced
- Salt and pepper to taste
- 60g/1/4 cup chopped fresh basil leaves (optional)
- 115g/4 oz grated Parmesan cheese (optional)
Instructions
1. Boil the pasta following the time listed on the package until it is al dente. Drain the pasta and reserve it for later use.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped parsley and sauté until fragrant.
3. Stir in crushed tomatoes chopped olives salt and pepper. Lower the heat and let the mixture simmer for approximately 10 minutes while occasionally stirring.
4. Break the tuna into flakes and mix it into the sauce. Stir well and allow it to heat for about a minute.
5. Serve the dish by placing the cooked pasta in a bowl. Spoon the tuna sauce on top and finish with extra parsley basil leaves and Parmesan cheese if you like.
