Crispy Bread with Crab Delight
Ingredients
- 450 grams (1 pound) crab meat drained and flaked
- 120 milliliters (1/2 cup) mayonnaise
- 15 grams (1/4 cup) fresh dill finely chopped
- 15 milliliters (1 tablespoon) fresh lemon zest finely grated
- 60 grams (1/4 cup) unsalted butter for frying
- 8 pieces soft flatbread about 20 cm 8 inch diameter
- Salt and freshly ground pepper to taste
- Rhubarb spritzer optional
Instructions
1. Gently mix crab meat mayonnaise dill lemon zest salt and pepper in a bowl taking care not to break up the crab flakes
2. Cover and refrigerate for 15 minutes
3. Cut each flatbread piece into 2 to 3 squares to yield 20 squares total
4. Melt butter in a skillet over medium heat
5. Fry the flatbread squares in batches until golden and crisp about 1 to 2 minutes per side
6. Drain on paper towels
7. Top each square with a generous spoonful of the crab mixture
8. Serve immediately with rhubarb spritzer on the side
