Crispy Chicken Breast with Garlic Yogurt Sauce
Ingredients
- 1 chicken breast fillet
- 500g / 1.1lb
- 250ml / 1 cup Greek yogurt (10%)
- 15g / 1 tablespoon fresh thyme
- 15g / 1 tablespoon all-purpose flour
- 3g / 1 small garlic clove minced
- 25g / 1-2 tablespoons butter for frying
- smoked paprika to taste
- salt to taste
- black pepper to taste
- 1 egg
- 60g / ½ cup panko breadcrumbs
Instructions
1. Mix flour, smoked paprika, salt, and black pepper in a shallow dish.
2. Dip chicken breast fillet in flour mixture and shake off excess.
3. Dip floured chicken in beaten egg making sure it's fully coated.
4. Roll egg-coated chicken in panko breadcrumbs pressing gently to adhere.
5. Heat a non-stick skillet with 25g or 2 tablespoons of butter over medium heat 180°C or 350°F. Add breaded chicken breast and cook until golden brown on both sides about 5-6 minutes per side.
6. While chicken is cooking mix 200g or 7 ounces of Greek yogurt with 2 cloves of minced garlic and 1 tablespoon of chopped fresh thyme in a bowl.
7. Once chicken is cooked serve with garlic yogurt sauce spooned over the top.
