Crisscross Potatoes with Bacon and Garlic Butter

Ingredients
- 1 kilo (2.2 lbs) potatoes, preferably soft
- 120g (4.3 oz) bacon
- 75g (2.6 oz) garlic butter
- 1 dl (0.4 cups or 6.7 fl oz) chopped fresh parsley
Instructions
1. Preheat your oven to 200 degrees Celsius or 392 degrees Fahrenheit.
2. Peel the potatoes and cut them into long thin strips, similar to French fries.
3. In a large bowl combine the potato strips with chopped parsley, mixing well to coat the potatoes evenly.
4. Transfer the potato-parsley mixture to a baking sheet lined with parchment paper, spreading them out in a single layer.
5. Cut the bacon into small pieces and scatter them evenly over the potatoes.
6. Dot the top of the potatoes with garlic butter, making sure to cover the entire surface.
7. Bake in the preheated oven for about 45 minutes, or until the potatoes are golden brown and crispy.
8. Remove the potatoes from the oven and let them cool for a few minutes before serving.
