Crossed Potatoes with Bacon and Broccoli

Crossed Potatoes with Bacon and Broccoli
This dish brings together golden crispy potatoes, smoky bacon, and tender broccoli for a comforting mix of crunch and warmth. It's the kind of meal that feels satisfying without trying too hard, where each bite balances salt and earthiness. I love how the simple ingredients come together without fuss, making it a go-to when I want something hearty but not heavy. It reminds me of weekend mornings when the kitchen fills with warmth and everything feels just right.
Ingredients
  • 454 g (1 lb) baking potatoes, peeled
  • 140 g (5 oz) bacon
  • 240 g (8 oz) shredded cheddar cheese
  • 75 g (2.5 oz) broccoli florets
  • 5 g (1 tsp) salt
  • 2.4 g (1 tsp) paprika powder
Instructions

1. Preheat your oven to 250°C (482°F).

2. Steam the broccoli until tender, about 5 minutes, then drain and set aside.

3. Place the potatoes on a baking sheet, leaving space between each one.

4. Use a potato masher to gently flatten each potato.

5. Sprinkle salt and half of the paprika powder evenly over the potatoes.

6. Bake them in the preheated oven for 10 minutes.

7. While the potatoes bake, mix the remaining paprika powder with half of the shredded cheese.

8. Take the potatoes out of the oven and top each with a bit of broccoli, a dollop of the paprika-cheese mixture, and a sprinkle of extra shredded cheese.

9. Return the potatoes to the oven for another 5 minutes.

10. In the meantime, fry the bacon in a pan until crispy. Be careful when frying bacon to avoid hot grease splatters.

11. When ready, serve each potato topped with the rest of the paprika-cheese mixture and pieces of crispy bacon.
