These no-bake energy bites are a staple in my kitchen—ready in minutes with no cooking required. Packed with dates, nuts, and cocoa, they offer a balanced boost of lasting energy. Perfect for hiking, commuting, or beating afternoon fatigue. Just toss a few in your pocket or purse and go. Real food, real results.
Ingredients
  • 180 g (1 1/2 cups) unsweetened cocoa powder
  • 120 g (1 cup) toasted hazelnuts
  • 120 g (3/4 cup packed) pitted dates
  • 60 g (1/2 cup) salted cashews
  • 60 ml (1/4 cup) coconut oil
  • 6 dried figs, stems removed
  • 1 1/2 tsp cold brewed coffee
  • 1/2 tsp sea salt
  • shredded coconut, for rolling (about 1/2 cup)
Instructions

1. Place coconut oil, cold coffee, and salt in a large bowl. Stir until fully combined and smooth.

2. Add hazelnuts, cashews, and cocoa powder. Mix with a spatula or your hands until the dry ingredients are incorporated and a thick, sticky dough forms.

3. Fold in pitted dates and chopped dried figs. Blend evenly so each bite has consistent texture and sweetness.

4. Roll the mixture into 2.5 cm (1 inch) balls. If the mix sticks to your hands, chill for 10 to 15 minutes first.

5. Coat each ball in shredded coconut, pressing lightly to adhere.

6. Arrange on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to two weeks or freeze for longer storage.
