Delicious Apple and Almond Cake Gluten Free

- 2 large eggs
- 125g / 1/2 cup unsalted butter, softened
- 200g / 2 medium apples, peeled and chopped
- 100g / 1/2 cup granulated sugar
- 100g / 1/2 cup confectioners sugar
- 190g / 1 1/2 cups almond flour, packed tightly
- 100g / 3/4 cup all-purpose gluten-free flour
- 2 teaspoons ground spices: 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cardamom
- 1/2 teaspoon baking powder
- 1/2 teaspoon almond extract
1. Preheat the oven to 175°C or 350°F.
2. In a large mixing bowl whisk together 250g or 2 3/4 cups of almond flour, 200g or 1 cup of granulated sugar, 100g or 3/4 cup of gluten-free flour, 1 teaspoon of baking powder, 1 teaspoon of cinnamon and 1/2 teaspoon of ground cardamom.
3. In a separate bowl whisk together 3 large eggs, 150g or 1 cup of chopped apples and 115g or 1/2 cup of softened butter.
4. Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to overmix.
5. Pour the batter into a greased 23cm or 9-inch round cake pan and smooth the top.
6. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
8. Dust the cake with confectioners sugar before serving.
