Delicious Chicken Club Sandwich with a Twist

Ingredients
- 450g/1 lb roasted chicken breast, sliced
- 120g/4.3 oz sourdough bread, cut into 4 slices
- 120g/4.3 oz bacon, cut into 4 slices
- 150g/5.3 oz lettuce, chopped (about 1/2 head)
- 120g/4.3 oz tomatoes, cut into 3 large slices
- 60g/2.1 oz red onion, thinly sliced
- 60g/2.1 oz cornichons
- 60ml/2 fl oz light mayonnaise
- 15ml/0.5 fl oz Dijon mustard
- Salt and pepper to taste
Instructions
1. Preheat the oven to 200°C/400°F.
2. Cook the bacon slices in the oven for 15-20 minutes, or until crispy.
3. Meanwhile, toast the sourdough bread slices until lightly browned.
4. Spread a layer of Dijon mustard on each toasted bread slice.
5. Top each slice with a layer of roasted chicken breast, followed by a lettuce leaf, a tomato slice, a few cornichons, and a slice of crispy bacon.
6. Season with salt and pepper to taste.
7. Finish each sandwich with a dollop of light mayonnaise on top.
8. Serve immediately and enjoy!
