Delicious Shrimp Ceviche with Avocado and Mango
Ingredients
- 1 pound (450g) shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1 red chili pepper, seeded and finely chopped
- 3 tablespoons (45 ml) lime juice
- 3 tablespoons (45 ml) olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
1. Whisk lime juice, garlic, and chili pepper in a small bowl to make the marinade.
2. Combine diced shrimp, avocado, and mango in a large bowl. Pour the marinade over the top and gently stir to combine.
3. Cover the bowl with plastic wrap and refrigerate at 4°C/39°F for at least 30 minutes to allow the flavors to meld.
4. Just before serving stir in 2-3 tablespoons/30-45 ml of olive oil and season with salt and pepper to taste.
5. Serve the ceviche in small glasses or bowls garnished with additional lime wedges and toasted bread or crackers on the side if desired.
