Delightful Creme Fraiche and Caviar Bites

Ingredients
- 8.8 ounces (250g) Västerbotten Cheese, grated (approximately 1 cup or 240 ml)
- 3.5 ounces (100g) caviar
- 1/2 red onion
- 1 cup (240 ml) crème fraîche
- 2 sheets of puff pastry (thawed), or gluten-free alternative (smördeg is Swedish for 'butter dough', similar to puff pastry)
- 2 tablespoons chopped fresh dill
Instructions
1. Preheat your oven to 350°F or 175°C, then line a baking sheet with parchment paper.
2. Cut the puff pastry, or smördeg as it's known in Swedish, into 1-inch or 2.5 cm squares.
3. In a bowl, combine the crème fraîche with the grated cheese, adding a pinch of salt and pepper to taste.
4. Spread a small amount of the crème fraîche mixture onto each pastry square, leaving a 1/2-inch or 1.3 cm border around the edges.
5. Top each square with a small spoonful of caviar, a sprinkle of chopped red onion, and a pinch of dill.
6. Arrange the bites on the prepared baking sheet and refrigerate for at least 30 minutes to allow the flavors to meld together.
7. Serve the chilled pastry bites and enjoy!
