Double Marinated Chicken Breast with Bacon

Ingredients
- 500 g (1.1 lb) boneless skinless chicken breast fillets
- 200 g (7 oz) thin-cut bacon slices
- 100 ml (3.4 fl oz) extra-virgin olive oil plus extra for brushing
- 30 ml (2 tbsp) Chinese soy sauce
- 30 ml (2 tbsp) balsamic vinegar
- 30 ml (2 tbsp) mixed chopped fresh herbs (thyme parsley oregano)
- 10 ml (2 tsp) finely chopped fresh red chili pepper
- Kosher salt and freshly ground black pepper to taste
Instructions
1. Preheat grill to medium-high heat (200°C/400°F)
2. Whisk olive oil soy sauce balsamic vinegar mixed herbs and chili pepper in a bowl
3. Season mixture with salt and pepper
4. Place chicken in resealable bag pour marinade over and seal
5. Refrigerate 2 hours or overnight turning once halfway
6. Remove chicken letting excess marinade drip off
7. Wrap each breast tightly with bacon slices overlapping edges
8. Brush grill grates lightly with olive oil
9. Grill 15-20 minutes turning occasionally until chicken reaches 165°F (74°C) and bacon crisps
10. Transfer to cutting board tent with foil rest 5 minutes
11. Slice diagonally and serve immediately
