Double Marinated Chicken Breast with Lemon

Ingredients
- 500g / 2.2 lbs Chicken breast fillet
- 60 ml / 1/4 cup Olive oil
- 30g / 2 tablespoons Butter
- 30 ml / 2 tablespoons Honey
- 1 Lemon, including zest and juice
Instructions
1. Preheat your oven to 375°F or 190°C.
2. In a large bowl, whisk together olive oil, honey, lemon zest, and freshly squeezed lemon juice to create the marinade.
3. Add the chicken breast fillet to the marinade, mixing well to coat the entire fillet evenly. Cover the bowl with plastic wrap and refrigerate for a minimum of 2 hours or leave it overnight.
4. Take the chicken out of the refrigerator 30 minutes prior to baking. Position the chicken on a baking sheet lined with parchment paper and dot the top with butter.
5. Place the chicken in the preheated oven, baking for 35-40 minutes, or until it's cooked through.
6. Once done, let the chicken rest for 5 minutes before slicing and serving.
