Easy Pumpkin Bread in a Long Pan
Ingredients
- 150 g whole wheat flour (1 1/4 cups)
- 100 g all-purpose flour (3/4 cup)
- 5 g baking soda (1 teaspoon)
- 2.5 g baking powder (1/2 teaspoon)
- 3 g ground cinnamon (1 1/2 teaspoons)
- 1 g ground ginger (1/2 teaspoon)
- 0.5 g ground nutmeg (1/4 teaspoon)
- 3 g salt (1/2 teaspoon)
- 240 ml pumpkin puree (1 cup)
- 120 ml honey (1/2 cup)
- 120 ml vegetable oil (1/2 cup)
- 100 g eggs (2 large)
- 50 g pumpkin seeds (1/4 cup)
Instructions
1. Preheat oven to 175°C (350°F). Grease a 9x5 inch loaf pan
2. Whisk whole wheat flour all-purpose flour baking soda baking powder cinnamon ginger nutmeg and salt in a medium bowl
3. Beat eggs in a large bowl then mix in pumpkin puree honey and vegetable oil until smooth
4. Gradually add dry ingredients to wet ingredients stirring just until combined
5. Fold in pumpkin seeds
6. Pour batter into prepared pan smoothing the top
7. Bake 50-60 minutes until a toothpick inserted comes out clean
8. Cool in pan 10 minutes then transfer to wire rack before slicing
