Ingredients
  • 120g / 4.3 oz fresh cheese
  • 6g / 0.2 oz (1 teaspoon US / 0.5 teaspoon EU) baking powder
  • 1 large egg
  • 15g / 0.5 oz (1 tablespoon US / 15ml EU) fiber husk (psyllium husk)
  • 0.3g / a pinch of salt
Instructions

1. Preheat your oven to 375°F or 190°C.

2. In a large mixing bowl, whisk the eggs until they are smooth and creamy.

3. Add the psyllium husk, salt, and baking powder to the eggs and mix well until the ingredients are fully combined.

4. Crumble the fresh cheese, also known as ricotta or cottage cheese, into the egg mixture and mix until the cheese is evenly distributed.

5. Scoop the mixture into a greased muffin tin, filling each cup approximately two-thirds full.

6. Bake for 20-25 minutes or until the edges are golden brown, a sign that the treats are cooked to perfection.

7. Remove the treats from the oven and let them cool for a few minutes before serving and indulging in their warm delight.
