Feta and Fresh Thyme Stuffed Bell Peppers

Ingredients
- 200g / 7 oz feta cheese
- 100g / 3.5 oz goat cheese
- 4 bell peppers, any color
- 5 sprigs fresh thyme
- 1 clove garlic, crushed
Instructions
1. Preheat your oven to 375°F or 190°C.
2. Cut the tops off the bell peppers, then remove the seeds and membranes and place them in a baking dish.
3. In a bowl, combine feta cheese, goat cheese, and crushed garlic.
4. Chop the fresh thyme and add it to the cheese mixture, seasoning with salt and pepper to taste.
5. Stuff each bell pepper with the cheese mixture, dividing it evenly among the peppers.
6. Bake the peppers for about 30 minutes, or until they are tender and the filling is heated through.
7. Serve warm, garnished with additional fresh thyme if desired.
