Fish and Shrimp Gratin

Ingredients
- 500g (1.1 lb) red fish fillets (any white fish will do)
- 200g (7 oz) frozen baby spinach
- 1 cup (240ml) grated aged cheese (31% fat)
- 2 cups (480ml) heavy cream
- 3 cups (720ml) water
- 3 tablespoons (42g) all-purpose flour
- 3 fish stock cubes
- 2 tablespoons (30g) chopped fresh dill
- 1 tablespoon (15g) freshly squeezed lemon juice
- 1 tablespoon (14g) butter for greasing
- Salt and pepper
Instructions
1. Preheat your oven to 350°F or 175°C.
2. In a large pan, melt some butter over medium heat and sauté the fish fillets until they are golden brown on both sides.
3. Next, add the frozen spinach, 250ml or 8.5fl oz of water, 125ml or 4.2fl oz of heavy cream, 2 tablespoons of flour, 2 fish stock cubes, a handful of chopped fresh dill, the juice of half a lemon, and 125g or 4.4oz of grated cheese to the pan.
4. Season the mixture with salt and pepper according to your taste.
5. Transfer the mixture from the pan to a baking dish, making sure the fish fillets are fully covered by the sauce.
6. Bake the dish in the preheated oven for 20-25 minutes, or until the top is golden brown and the fish is cooked through.
7. Serve the dish hot and enjoy!
