Fish Fillets with Herb Butter

Ingredients
- 310 g (11 oz) fish fillets such as cod or haddock
- 450 g (16 oz) potatoes about 2 large
- 225 g (8 oz) fresh green asparagus trimmed
- 75 g (2.6 oz) unsalted butter softened divided
- 15 mL (1 tablespoon) fresh parsley dill or chives finely chopped
- Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C)
2. Peel the potatoes and slice into 1/4-inch (6 mm) rounds
3. Boil the potato slices in salted water for 5 to 7 minutes until just tender
4. Drain and set aside
5. Sprinkle salt and pepper over the fish fillets
6. Melt 15 g of the butter in a pan over medium heat
7. Add the asparagus and sauté for 3 to 4 minutes until crisp-tender
8. Remove from heat
9. In a small bowl mix the remaining 60 g of butter with the chopped herbs
10. Place the fish fillets on a parchment-lined baking sheet
11. Top each fillet with a portion of the sautéed asparagus
12. Scatter the potato slices around the fish
13. Dot the potatoes with the herb butter
14. Bake for 12 to 15 minutes until the fish flakes easily with a fork
15. Serve immediately
