Fish Fillets with Herb Butter

Fish Fillets with Herb Butter
My go-to weeknight meal when I need comfort without fuss. Flaky fish paired with buttery potatoes and crisp-tender asparagus, all topped with fresh herb butter—simple ingredients singing together. It’s the kind of dish that fills your kitchen with warmth and leaves hearts and bellies full. No fancy tricks, just honest food that tastes like home. Perfect for when you want to savor quiet moments without spending hours at the stove.
Ingredients
  • 310 g (11 oz) fish fillets such as cod or haddock
  • 450 g (16 oz) potatoes about 2 large
  • 225 g (8 oz) fresh green asparagus trimmed
  • 75 g (2.6 oz) unsalted butter softened divided
