  • 300 g / 10.6 oz fish (such as cod)
  • 300 g / 10.6 oz potatoes
  • 125 g / 4.4 oz cherry tomatoes on the vine
  • Salt to taste
  • Pepper to taste
Instructions

1. Preheat your oven to 375°F (190°C).

2. Peel the potatoes and slice them into 1/8-inch (3 mm) thick rounds.

3. In a large bowl combine sliced potatoes and a pinch of salt.

4. Place the fish on top of the potatoes followed by the small tomatoes on the vine.

5. Season with pepper to taste.

6. Transfer the mixture to a baking dish and bake for 30-40 minutes or until the fish is cooked through and the potatoes are tender.
