Ingredients
  • 21.2 oz / 600g Pork Fillet
  • 3.5 oz / 100g Garlic Butter, softened
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Fresh thyme, finely chopped
Instructions

1. Preheat the oven to 400°F (200°C).

2. Season the pork fillet with salt and pepper on both sides.

3. In a large skillet, melt 2 tablespoons of garlic butter over medium-high heat.

4. Sear the pork fillet for 2-3 minutes on each side then transfer it to the preheated oven.

5. Roast for 15-20 minutes or until the internal temperature reaches 145°F (63°C).

6. While the pork is cooking mix the remaining garlic butter ingredients in a small bowl.

7. Once the pork is done let it rest for 5 minutes before slicing it thinly against the grain.

8. Serve with the garlic butter spooned over the top.
