Fresh Cheese Stuffed Salmon with Shrimp and Herbs

- 400g / 14.1 oz salmon fillets, 4 fillets of equal size
- 300g / 10.6 oz large shrimp, peeled and deveined
- 250ml / 1 cup heavy cream
- 200g / 7 oz fresh cheese (31% fat)
- 115g / 1/2 cup chopped fresh parsley
- 55g / 1/2 cup chopped fresh dill
- 2 lemons, one finely zested, one zested and juiced
- Salt and pepper to taste
1. Preheat your oven to 400°F or 200°C to get started.
2. Make a lengthwise cut in each of your salmon fillets and season the fish with a pinch of salt and a few grinds of pepper.
3. In a large bowl, combine fresh cheese, a sprinkle of chopped dill, some parsley, and a squeeze of lemon zest. Split this mixture evenly among the salmon fillets, spooning it into the incision you made earlier.
4. Next, place the stuffed salmon fillets in a baking dish that's been greased with butter, then pour heavy cream over them. Pop the dish into your preheated oven and bake for 15 minutes.
5. To serve, top each salmon fillet with a succulent shrimp, a sprinkle of lemon zest, and a few fresh dill fronds. Serve alongside boiled potatoes and a squeeze of fresh lemon juice from a wedge on the side.
