Fresh Mango and Avocado Salsa from Mexico

Ingredients
- 250ml/1 cup diced mango (fresh or frozen)
- 250ml/1 cup diced avocado (fresh or frozen)
- 120g/4.3 oz thinly sliced red onion
- 120g/4.3 oz chopped fresh cilantro
- 60ml/2 fl oz rapeseed oil
- 30ml/2 tbsp freshly squeezed lime juice
- 5g/1 tsp grated lime zest
- 1 fresh red chili pepper, sliced
Instructions
1. Combine diced avocado, red onion, and sliced red chili pepper in a large bowl.
2. In a small bowl, whisk together rapeseed oil, grated lime zest, and freshly squeezed lime juice.
3. Pour the dressing over the avocado mixture and gently stir until well combined.
4. Stir in diced mango and chopped cilantro.
5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together at a temperature of 3°C/37°F.
6. Serve chilled or at room temperature, around 20°C/68°F.
