Fresh Shrimp and Cheese Skewers with Fresh Herbs

Ingredients
- 340g (12 oz) fresh brie cheese
- 16 large shrimp, peeled and deveined
- 8 slices of French bread
- 60g (1/4 cup) fresh thyme leaves
- 115g (1 cup) freshly chopped chives
- Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F or 190°C.
2. In a small bowl, combine the chopped chives and thyme leaves.
3. Slice the baguette into 1-inch or 2.5 cm thick rounds and toast until lightly browned.
4. Cut the brie cheese into small cubes and place a few pieces on each toasted bread round.
5. Arrange 2 shrimp on top of the cheese, leaving a small border around the edges.
6. Sprinkle the shrimp with a pinch of salt and pepper.
7. Place the bread rounds on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the shrimp are pink and cooked through.
8. Remove from the oven and garnish with additional fresh herbs if desired.
