Fresh Shrimp Salad

Ingredients
- 450g/1 lb large shrimp, peeled and deveined
- 3 tablespoons/45ml olive oil
- 2 teaspoons/10ml freshly ground black pepper
- 1 teaspoon/5ml salt
- 1 ripe mango
- 1 red onion
- 1 avocado
- 1/2 fresh red chili pepper
- 1 bunch fresh coriander
- 1 lime
Instructions
1. Combine the shrimp, mango, and red onion in a large bowl.
2. In a separate, smaller bowl, whisk together 60ml (2 fl oz) of olive oil, 6g (1 tsp) of salt, and 3g (1/2 tsp) of black pepper until well combined.
3. Add 15g (1/2 oz) of chopped fresh coriander and 15g (1/2 oz) of diced red chili pepper to the bowl containing the shrimp mixture.
4. Squeeze the juice of 1 lime over the top of the mixture and toss gently to combine all the ingredients.
5. Cover the bowl with plastic wrap and refrigerate at 4°C (39°F) for at least 30 minutes to allow the flavors to meld together.
6. Just before serving, slice 1 ripe avocado and add it to the bowl.
7. Toss the mixture gently and serve chilled, straight from the refrigerator.
