Gluten-Free Apple Cake with Coconut

- 400g (2 cups) almond flour
- 400g (2 cups) granulated sugar
- 84g (6 tablespoons) melted unsalted butter or margarine
- 3 medium-sized apples, peeled and chopped (approximately 450g / 1 lb)
- 60g (1/2 cup) coconut flakes
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 large egg
1. Preheat your oven to 180°C (350°F).
2. Grease a round cake pan that's 23cm (9 inches) in diameter.
3. In a large mixing bowl, combine the sugar, melted butter or margarine, and egg, beating until they're well combined.
4. Add the chopped apples and mix until they're evenly distributed throughout the mixture.
5. In a separate bowl, whisk together the almond flour, coconut flakes, baking powder, cinnamon, and baking soda.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
7. Pour the batter into the prepared cake pan and smooth the top to create an even surface.
8. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
9. Remove the cake from the oven and let it cool completely before serving.
10. Serve with whipped cream or vanilla ice cream, if desired, for an extra-special treat.
