Greek Chicken Rolls with Feta and Bacon

- 550g (1.21 lbs) boneless and skinless chicken breast fillets, cut into thin strips
- 100g (3.53 oz) Feta cheese
- 250ml (1.06 cups) grated Parmesan cheese
- 8 bacon slices
- 2 tablespoons (30g) fresh oregano
- Butter for greasing the pan
- Fresh parsley for garnish
- Salt and pepper to taste
1. Preheat your oven to 375°F (190°C).
2. Line a baking sheet with parchment paper.
3. In a bowl, combine grated Parmesan cheese, fresh oregano, salt, and pepper. Mix well.
4. Lay the chicken strips flat on a surface and sprinkle the cheese mixture evenly over each strip, leaving a 1-inch (2.5 cm) border at one end.
5. Cut the feta cheese into small cubes and place them at the center of each chicken strip, leaving a small border around the cheese.
6. Roll the chicken strips tightly but gently, making sure the cheese is secure inside. If needed, secure the rolls with toothpicks.
7. Place the chicken rolls seam-side down on the prepared baking sheet. Brush the tops with butter and bake for 25-30 minutes, or until cooked through.
8. While the chicken is baking, cook the bacon slices in a pan over medium heat until crispy. Drain on paper towels.
9. Once the chicken is done, top each roll with a few pieces of crispy bacon.
10. Serve hot, garnished with fresh parsley.
