These tender beef rolls burst with Mediterranean flair—juicy meat wrapped around a creamy, tangy filling of feta, sun-dried tomatoes, and fresh basil. Browned in butter, then finished in the oven for perfect tenderness, they're topped with a silky sauce that ties everything together. Simple enough for a weeknight, elegant enough for guests. Ingredients
  • 500 g (1 lb 1.6 oz) beef sirloin strips, 2.5 cm (1 in) thick
  • 150 g (5.3 oz) garlic-infused feta cheese, crumbled
  • 75 g (2.6 oz) plain feta cheese, crumbled
  • 8 pieces sun-dried tomatoes in oil, finely chopped
  • 2 tbsp (30 g) fresh basil leaves, chopped
  • 3 tbsp (45 g) olive tapenade with green olives
  • 1 cup (250 ml / 8.5 fl oz) water
  • 2 tbsp (30 ml / 1 fl oz) butter
  • 1 tbsp (15 ml / 0.5 fl oz) beef broth
  • 1 tbsp (15 ml / 0.5 fl oz) soy sauce
  • 1 tbsp (8 g) cornstarch
  • 2 tbsp (30 ml / 1 fl oz) crème fraîche
  • Salt and freshly ground black pepper, to taste
Instructions

1. Preheat oven to 190°C (375°F)

2. Pat the beef strips dry with paper towels and season generously with salt and pepper in a large bowl

3. In another bowl, combine the garlic feta, plain feta, sun-dried tomatoes, basil, and olive tapenade until well mixed

4. Lay a beef strip flat on a clean surface and place about 15 g of the feta mixture along the center

5. Fold the beef over the filling, pressing the edges to seal tightly; repeat with all strips

6. In a large ovenproof skillet, melt 15 g butter over medium heat

7. Add the beef rolls seam-side down and sear for 3 to 4 minutes until golden brown

8. Flip each roll and sear the other side for another 3 to 4 minutes

9. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the beef reaches your desired doneness

10. While the rolls bake, whisk together the beef broth, cornstarch, crème fraîche, and soy sauce in a small bowl until smooth

11. Remove the skillet from the oven and transfer the beef rolls to a serving platter

12. Place the skillet back on the stove over low heat and pour in the sauce mixture

13. Simmer for 2 to 3 minutes, stirring constantly, until the sauce thickens

14. Spoon the warm sauce evenly over the beef rolls

15. Brush the tops lightly with melted butter and sprinkle with extra chopped basil

16. Serve immediately with a side of crusty bread or roasted vegetables
