Grilled Chicken Skewers with Mango Sauce

- 1.76 pounds (800g) chicken breast fillets
- 1 cup (250ml) chopped rosemary
- 1/2 lemon, juiced and zested
- 1 mango, diced
- 1/4 cup (60ml) mayonnaise
- 1/4 cup (60ml) yogurt
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) honey
- 1 tablespoon (15ml) sambal oelek
- 1 tablespoon (15ml) soy sauce
- 1 tablespoon (15ml) tomato puree
- 1 clove garlic, minced
- Salt and pepper to taste
1. Preheat your grill to medium-high heat, which is around 400°F (200°C).
2. Cut the chicken breast fillets into bite-sized pieces, about 2-3 per fillet.
3. In a large bowl, whisk together 1/2 cup (120 ml) of olive oil, 2 tablespoons (30 ml) of soy sauce, 1 tablespoon (15 g) of honey, 1 teaspoon of lemon zest, 2 tablespoons (30 ml) of lemon juice, 2 minced garlic cloves, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
4. Add the chopped chicken pieces to the bowl and marinate for at least 20 minutes, or longer if desired.
5. Remove the chicken from the marinade and thread onto wooden skewers.
6. Grill the skewers for about 15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
7. Meanwhile, prepare the mango sauce by combining 1 diced mango, 2 tablespoons (30 g) of sambal oelek (chili paste), 2 tablespoons (30 g) of tomato puree, 1/4 cup (60 g) of plain yogurt, and 2 tablespoons (30 g) of mayonnaise in a bowl.
8. Season the mango sauce with salt and pepper to taste.
9. Serve the mango sauce alongside the grilled chicken skewers.
