Grilled Ham and Red Cabbage Slaw Sandwich
- 4 slices of bread
- 4 slices (100 g) of ham
- 4 slices (100 g) of aged cheddar cheese
- 1/4 (60 g) red cabbage, finely shredded
- 2 tbsp (30 ml) rapeseed oil
- 2 tbsp (30 ml) apple cider vinegar
- 1 tsp (5 g) salt
- 1/4 tsp ground white pepper
- 2 tbsp (30 ml) liquid honey
- 1/2 (75 g) roasted onion, thinly sliced

1. In a large bowl, combine the shredded red cabbage, salt, white pepper, rapeseed oil, and apple cider vinegar. Massage the mixture with a spoon for about 5 minutes until the cabbage is slightly softened. Set aside for 15 minutes to allow the flavors to meld.
2. Butter the bread slices on both sides, using 30 g of butter divided between the 4 slices.
3. Divide the ham, aged cheddar, red cabbage slaw, and roasted onion between two bread slices. Top each with the remaining bread slices.
4. Heat a grill pan or sandwich press over medium heat. Grill the sandwiches for 3 to 4 minutes per side until golden brown and the cheese is melted.
5. Serve immediately with 2 teaspoons of mustard per sandwich. Be careful when biting into the hot sandwich, as the filling may be very hot.
