Ground Meat and Carrot Pasta Sauce

Ingredients
- 450g (1 lb) ground beef or combination
- 1 medium onion, finely chopped (about 250g/8.8 oz)
- 125ml (1/2 cup) white wine or water
- 400g (14.1 oz) can of crushed tomatoes
- 1 tsp (5ml) dried oregano
- salt and pepper, to taste
- 1 medium carrot, coarsely grated (about 100g/3.5 oz)
- 2 cloves of garlic, pressed (about 6g/0.2 oz)
- 1 tsp (5g) salt
- 1/2 tsp (2g) black pepper
- Fresh parsley, chopped (optional, for garnish)
- Pasta, cooked (for serving)
Instructions
1. Cook pasta according to package instructions until al dente, then drain and set aside.
2. In a large pan, combine ground meat, chopped onion, and pressed garlic. Cook over medium heat, breaking up the meat with a spoon as it cooks, until the meat is no longer pink, about 5-7 minutes.
3. Add crushed tomatoes, white wine or water, dried oregano, salt, and black pepper to the pan. Stir well to combine, then bring the sauce to a simmer. Let it cook for 20 minutes, stirring occasionally, until the sauce has thickened slightly.
4. Stir in coarsely grated carrot and cook for an additional 2-3 minutes, until the carrot is slightly tender.
5. Serve the ground meat and carrot sauce over cooked pasta, garnished with chopped fresh parsley if desired.
