There's something deeply comforting about a warm, hearty stew on a cold evening. This recipe is all about cozying up with a rich, satisfying bowl of goodness that's packed with flavor. Ground meat, beans, and a medley of aromatic spices come together in perfect harmony to create a dish that feels like a warm hug on a chilly night.
Ingredients
  • 500g/1.1lb ground meat
  • 9 cups/2.1 liters water
  • 300g/10.6oz large white beans, drained and rinsed
  • 2 tablespoons/30g butter
  • 3 cups/250g chopped onion (about 1 large onion)
  • 2 cups/150g chopped bell peppers (about 2 bell peppers)
  • 1 cup/115g finely chopped carrot (about 1 large carrot)
  • 3 teaspoons/15g salt
  • 2 teaspoons/10g black pepper
  • 2 teaspoons/10g paprika powder
  • 2 teaspoons/10g sambal oelek (chili paste)
  • 1 ¾ cups/420ml tomato puree
  • 2 beef bouillon cubes
  • 3 cloves/9g pressed garlic
Instructions

1. Brown the ground meat, onion, and carrot in 2 tablespoons (30g) of butter in a large pot over medium-high heat, about 200°F (90°C).

2. Add 2 tablespoons (30g) of tomato puree, 1 teaspoon of sambal - or chili paste, 2 cloves of minced garlic, 1 teaspoon of paprika powder, salt, and pepper to taste. Stir well to combine.

3. Add 4 cups (1L) of water and 2 bouillon cubes to the pot and bring to a boil. Reduce heat to low, around 180°F (80°C), and simmer for 5 minutes.

4. Drain the liquid from 1 cup (150g) of cooked beans and chop 2 bell peppers into small pieces. Add the beans and bell peppers to the pot and bring to a boil.

5. Serve hot, garnished with chopped parsley and a dollop of yogurt if desired.
