Hearty Pea Soup with or without Bacon
Ingredients
- 400g (14.1 oz) Bacon (optional)
- 250g (4 dl or 1.7 cups) Yellow split peas
- 2 Yellow onions
- 2 Vegetable bouillon cubes
- 1.5 liters (6.8 cups) Water
- 2 tsp (1 tsp each) Salt and Marjoram (dried)
- 1 tsp Thyme (dried)
Instructions
1. Sear the chopped onions in a little water in a large pot over medium heat until they're soft and translucent.
2. Add thyme, marjoram, and salt to the pot and stir well.
3. Pour in 1 liter (4 cups) of water and bring to a boil at 100°C (212°F).
4. Add 250g (1 cup) of yellow split peas to the pot and reduce the heat to a low simmer at 80-90°C (176-194°F).
5. Let the soup cook for about 45 minutes or until the peas are tender.
6. If using 115g (4 oz) of bacon, chop it into small pieces and add it to the pot during the last 10 minutes of cooking.
7. Serve the soup hot, garnished with a swirl of 15ml (1 tablespoon) of cream or a sprinkle of chopped fresh herbs if desired.
