Hearty Sausage Stew with Root Vegetables
Ingredients
- 1.3 lbs / 590g sausage (e.g. Swedish Falukorv), cut into bite-sized pieces
- 2.2 lbs / 1kg mixed root vegetables (e.g. potatoes, carrots, parsnips, turnips, and celery root)
- 3.4 cups / 800ml meat broth
- 2 whole star anise
- 1 bay leaf
- 3 whole white peppercorns
- 1/2 cup / 115g chopped leek
- 0.5 tsp / 2.5ml salt
- 0.25 cups / 30g chopped fresh parsley
Instructions
1. Peel root vegetables and chop them into small pieces.
2. Bring meat broth to a boil in a large pot then add root vegetables 1 tsp EU / 2 tsp US of salt and your chosen spices.
3. Simmer for 15 minutes or until vegetables are slightly tender at 90°C EU / 194°F US.
4. Add sausage pieces to pot along with chopped leek and 1 bay leaf.
5. Simmer for a few more minutes or until sausage is cooked through at 70°C EU / 158°F US.
6. Season with salt and pepper to taste.
7. Stir in 2 tbsp EU / 3 tbsp US of chopped parsley.
8. Serve stew in deep bowls with a dollop of flavorful broth on top.
