Herbed Cheese Bites

- 375g (2 1/2 cups US, 625ml EU) all-purpose flour
- 225g (7.9 oz US, 1 cup EU) aged cheddar cheese (31% fat), grated
- 150g (5.3 oz US, 1/2 cup EU) softened butter, at room temperature
- 1 large egg, at room temperature
- 3 teaspoons ground black pepper
- 3 teaspoons dried thyme
- 2 1/4 teaspoons salt
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine 115g (1/2 cup US, 115ml EU) of softened butter, 115g (1/2 cup US, 115ml EU) of grated cheese, and 160g (1 1/4 cups US, 190ml EU) of all-purpose flour. Mix until a dough forms.
3. Add 1 1/2 teaspoons of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of dried thyme to the dough. Mix well until the ingredients are evenly distributed.
4. Divide the dough into small balls, about 2.5 cm (1 inch) in diameter. Place the balls onto the prepared baking sheet, leaving about 2.5 cm (1 inch) of space between each ball.
5. Flatten the balls slightly with a fork. Brush the tops with a little bit of beaten egg.
6. Bake the herbed cheese bites for 15-20 minutes, or until they are lightly golden brown.
7. Remove the bites from the oven and let them cool on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely.
8. Serve the herbed cheese bites at room temperature.
