Bologna sausage nests in a rich, creamy sauce studded with tangy sun-dried tomatoes, briny olives, and melty mozzarella. Baked until bubbling and golden, it’s the kind of dish that bridges humble ingredients and bold flavor—simple enough for a weeknight, satisfying enough to serve guests. Pair it with pasta, rice, or crusty bread to catch every last bit of sauce.
Ingredients
  • 800 g / 1.76 lb bologna sausage
  • 500 ml / 2.1 cups crème fraîche (or sour cream)
  • 125 g / 4.4 oz mozzarella cheese, shredded
  • 100 g / 3.5 oz sun-dried tomatoes, drained and sliced
  • 100 g / 3.5 oz black olives, pitted and halved
  • 2.5 g / ½ tsp salt
  • 2.5 g / ½ tsp black pepper (coarsely ground preferred)
Instructions

1. Preheat oven to 225°C (425°F)

2. Slice the bologna sausage into 1 cm (½ inch) thick rounds and arrange in a single layer in a 30 cm (12 inch) round baking dish

3. In a large bowl, combine crème fraîche, salt, and pepper

4. Stir in shredded mozzarella, sun-dried tomatoes, and olives until evenly mixed

5. Pour the mixture over the sausage, distributing ingredients evenly and coating each piece

6. Bake for 20 minutes, or until the top is golden and the edges are bubbling

7. Let rest 5 minutes before serving to thicken the sauce slightly

8. Serve warm with pasta, rice, or boiled potatoes
