Italian-Style Chicken with Herb Sauce
- 1 kg / 2.2 lbs chicken breast fillet
- 1/2 cup / 120 ml olive oil
- 1 cup / 240 ml Turkish yogurt (10%)
- 1 cup / 30g chopped fresh parsley
- 1 cup / 30g chopped fresh basil
- 2 cloves garlic minced
- 2 tbsp / 30g butter
- 2 tsp dried thyme
- 1 tsp salt
- 2 pinches black pepper
1. Begin by preheating your oven to 350°F (175°C).
2. Preheat is not needed in this recipe so preheat the oven is removed.
3. In a large mixing bowl combine chicken breast salt and black pepper.
4. Massage the seasonings into the meat until well coated.
5. In a large skillet melt 1 tablespoon of butter over medium heat.
6. Add the chicken breast and cook until browned on both sides about 5-6 minutes per side.
7. Remove from heat and set aside.
8. In the same skillet add the remaining 1 tablespoon of butter.
9. Once melted add the minced garlic and sauté for 1-2 minutes until fragrant.
10. In a small bowl whisk together olive oil Turkish yogurt salt and ground pepper.
11. Stir in the chopped fresh basil and parsley into the yogurt mixture until well combined.
12. Place the cooked chicken breast in a large serving dish.
13. Spoon the herb sauce over the top of the chicken making sure to cover it evenly.
14. Serve hot and enjoy.
