These muffins are something I’ve baked time and time again, always with that same rush of joy when I pull them from the oven. The glaze is smooth and indulgent, wrapping each muffin in a sweet embrace. They’re a hit at gatherings, though honestly I often make them just for myself on quiet mornings. There’s something about the way the warmth of the muffin meets the coolness of the glaze that feels like a small luxury every time. No need for a special occasion to enjoy them—though it’s hard not to when they look this good on a dessert table.
Ingredients
  • 450g / 1 3/4 cups all-purpose flour
  • 200g / 1 cup unsalted butter, softened
  • 200g / 1 cup granulated sugar
  • 120g / 1 cup coconut flakes (for garnish)
  • 120ml / 1/2 cup milk
  • 60g / 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla sugar
Instructions

1. Preheat your oven to 350°F or 180°C.

2. Line a 12-cup muffin tin with paper liners.

3. In a medium bowl, whisk together flour, sugar, and baking powder.

4. In a large bowl, using an electric mixer, beat the butter and eggs until light and fluffy.

5. Add the milk, vanilla sugar, and flour mixture, mixing until well combined.

6. Divide the batter evenly among the muffin cups.

7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

8. Allow the muffins to cool completely before glazing.

9. To make the luxury glaze, melt 1/2 cup or 120g of unsalted butter and 1 cup or 200g of confectioners sugar in a saucepan over low heat, whisking until smooth.

10. Drizzle the glaze over the cooled muffins and garnish with coconut flakes.
