Luxurious Scones with Whipped Cream and Jam
- 340 grams (12 ounces) unsalted butter, softened to room temperature
- 480 milliliters (2 cups) all-purpose flour
- 240 milliliters (1 cup) whole milk
- 240 milliliters (1 cup) heavy whipping cream
- 10 grams (2 teaspoons) baking powder
- 6 grams (1 teaspoon) salt
- Granulated sugar, for sprinkling
1. Preheat the oven to 220°C (425°F).
2. In a large mixing bowl, combine flour, salt, and baking powder.
3. Using your fingers or a pastry blender, work the softened butter into the flour mixture until it resembles coarse crumbs.
4. Add the heavy whipping cream and whole milk to the bowl.
5. Quickly mix the ingredients together until a dough forms.
6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
7. Pat the dough into a circle that is about 5 cm (2 inches) thick.
8. Use a biscuit cutter or the rim of a glass to cut out scones.
9. Place the scones on a baking sheet lined with parchment paper.
10. Brush the tops of the scones with a little extra heavy whipping cream.
11. Sprinkle the tops with granulated sugar.
12. Bake in the preheated oven for 15 to 20 minutes or until golden brown.
13. Remove the scones from the oven and let them cool for a few minutes.
14. Carefully split the scones in half horizontally using a fork.
15. Serve warm with whipped cream and your favorite jam.
