Marinated Chicken Breast Perfectly Chilled

- 250ml/8.5fl oz Smoking Oil (or Peanut Oil for substitute)
- 4 x 170g/6 oz Boneless Skinless Chicken Breasts
- 6-8g/0.2-0.3 oz Salt (preferably Maldon or flaky sea salt)
- 12g/0.4 oz Peppercorns (preferably freshly cracked black peppercorns)
1. Preheat your oven to 300 degrees Fahrenheit, or 150 degrees Celsius.
2. Season the chicken breasts generously with salt and pepper, making sure they're evenly coated.
3. Place the chicken breasts in a baking dish and drizzle them with a small amount of smoking oil.
4. Roast the chicken in the oven for 20 to 35 minutes, or until it reaches an internal temperature of 160 degrees Fahrenheit, or 72 degrees Celsius. To avoid overcooking, use a thermometer to check the temperature.
5. While the chicken cooks, combine the marinade ingredients in a bowl and let it sit at room temperature.
6. Once the chicken is cooked through, remove it from the oven and carefully pour the marinade over the breasts.
7. Cover the dish with plastic wrap and refrigerate until the chicken is chilled.
8. Slice the chicken breasts into thin strips and serve them at room temperature, or chilled if you prefer.
