Moist and Delicious Sponge Cake
- 450g water
- 19g baking powder
- 375g granulated sugar
- 3 large eggs
- 190g unsalted butter softened
- 7.5g vanilla sugar
- 5 bitter almonds
- 475g all-purpose flour
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl whisk together the eggs and 250g/1 cup sugar until light and fluffy.
3. In a separate bowl whisk together the 500g/2 cups flour baking powder and 5g/1 teaspoon vanilla sugar.
4. Gradually add the softened 115g/1/2 cup butter to the egg mixture whisking until well combined.
5. Add the flour mixture to the egg mixture alternating with 60ml/4 tablespoons water until smooth.
6. Pour the batter into a greased and floured 2-liter (67 oz) cake pan.
7. Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
9. Dust with powdered sugar before serving accompanied by whipped cream and fresh berries if desired.
