Moist Apple Cake Delicious and Gluten Free

- 375ml (1 1/2 sticks or 12 tablespoons) unsalted butter, melted
- 115g (4 oz or 1 cup) grated coconut
- For the pan:
- 15g (1 tablespoon or 0.5 oz) granulated sugar
- 450g (1 lb or 3-4 count) apples, any variety
- 115g (1/2 cup or 4 oz) granulated sugar
- 2 large eggs
- 190g (1 1/2 cups or 6.7 oz) almond flour
- 60g (1/2 cup or 2 oz) coconut flour
- 3g (1/2 teaspoon) baking powder
- 3g (1/2 teaspoon) salt
- 2g (1/2 teaspoon) ground cinnamon
1. Preheat your oven to 350°F (175°C). This will give it ample time to reach the perfect temperature while you're preparing the rest of your ingredients.
2. Grease a 9-inch (23cm) springform pan with some melted butter, then sprinkle a thin layer of granulated sugar evenly across the bottom.
3. Next, take your apples and carefully peel, core, and slice them. Set these aside for now.
4. In a large mixing bowl, whisk together 1 cup (200g) of granulated sugar, 2-3 large eggs, 1 cup (120g) of almond flour, 1/4 cup (30g) of coconut flour, 1 teaspoon of baking powder, a pinch of salt, and 1/2 teaspoon of cinnamon. Combine these dry ingredients until they're well incorporated.
5. Add 1 cup (120g) of grated coconut to the bowl, mixing until it's evenly distributed throughout.
6. Gently fold the sliced apples into the mixture, taking care not to break them down too much.
7. Pour the mixture into your prepared springform pan and smooth the top to create a flat surface.
8. Place the pan in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
9. Once done, remove the pan from the oven and let it cool completely before serving.
