Nutty Oat Bars with Peanut Butter and Dried Fruit
My go-to snack bar when I need something sturdy and satisfying. These hold up perfectly in my bag without turning to mush. The peanut butter gives a rich base while the dried fruit adds little bursts of chewy sweetness. They crunch just right between your teeth—not too hard, not too soft. I make a batch on Sunday and they last me all week. Honestly, they taste like childhood lunches but grown up. No fancy tools needed beyond a saucepan and baking dish. They’re the quiet hero of my snack drawer.
Ingredients
  • 2.5 cups (200 g) rolled oats
  • 1/2 cup (125 g) creamy peanut butter
  • 1/4 cup (60 ml) light corn syrup
  • 1/2 cup (60 g) dried apricots chopped
  • 1/2 cup (60 g) dried cranberries chopped
  • 1/2 cup (60 g) salted peanuts coarsely chopped
Instructions

1. Melt the peanut butter and light corn syrup in a saucepan over low heat

2. Remove from heat and stir in the rolled oats dried apricots dried cranberries and salted peanuts until well combined

3. Press the mixture firmly into a 20x25 cm (8x10 inch) lined baking dish to compact it

4. Bake in a preheated oven at 350°F (175°C) for 20 minutes

5. Let the bars cool completely in the baking dish

6. Cut into bars of your preferred size

7. Melt chocolate chips in a double boiler or microwave in 30-second bursts stirring until smooth

8. Dip the ends of the bars in melted chocolate and let set on parchment paper
