Oat Rotor with Salted Peanuts
I love this oat rotor dessert with salted peanuts - it's perfect for a sweet and savory afternoon treat or a unique dessert for gatherings.
Ingredients
  • 8.82 ounces (250g) butter
  • 3.38 cups (8 dl) oat flour
  • 0.84 cups (2 dl) sugar (0.42 cups/1 dl granulated, 0.42 cups/1 dl powdered)
  • 1 teaspoon vanilla sugar
  • 0.25 teaspoons salt
  • Salted peanuts for garnishing
Instructions

1. In a large mixing bowl cream the butter and granulated sugar until light and fluffy

2. Gradually add the oat flour mixing well between each addition

3. Add the vanilla sugar and salt and mix until combined

4. Divide the dough into 24 portions

5. Shape each portion into a ball then flatten slightly into a round disc

6. Place the discs on a baking sheet lined with parchment paper

7. Sprinkle the powdered sugar over the top of each disc

8. Bake in a preheated oven at 350°F (180°C) for about 15 minutes or until lightly golden

9. Remove from the oven and top with salted peanuts while still warm
